Best Recipes for Festivals: Guacamole

Guacamole is so easy to make, it’s the perfect food for festivals. It’s best to make it there as the ingredients are easy to transport and you only need a Swiss army knife, a fork and a bowl.

Make it at home before and it’ll be brown and minging by the time comes to scoff it down.

My recipe uses a minimum of ingredients so it’s as fresh, cheap and tasty as possible. I believe the success lies in the avocado choice in the shop though – think about when you’re likely to eat this and choose the squidginess of the avocado accordingly. Also, y’know, if you can stretch to Waitrose or Marks and Spencer, you usually get what you pay for.

This guacamole festival recipe should be enough for four, depending on how hungry you are.

Ingredients

– 6 cherry tomatoes (make less mess if they squidge in transit than a big one)
– 3 avocados (the riper they are the easier they are to fork)
– 1 large lime, squeezed
– handful of coriander, roughly chopped
– 1 small red onion, finely chopped (could make it easier for yourself and bring this prechopped in a paper bag)
– 1 chilli, red or green, deseeded and finely chopped
– Salt and pepper (grab a few sachets from a pub beforehand)

And don’t forget the salted tortilla chips to scoop it up too. 

Method

Use your knife to carve up the tomato as small as you like, chopping it into the bowl. Knife the avocado in lines to make scooping it out with the spoon easier. I’d recommend going for a shaving method, scraping it off, so it’s easier to mash up with the other ingredients. Add the onion, squeeze the lime over and put in the chilli, and sprinkle with salt and pepper, if using. Use the fork to mash it all together. Scatter the coriander on top, or fold in, up to you.

All you need then is the tortilla chips to dip in and scoff it up. Serve with beers, or a gin and tonic to keep with the limey theme.
